Ingredients
Shortening
Egg - 1
Whole kernel corn - 1-12-ounce can
Shredded cheddar cheese - 1 cup
Corn muffin mix - 1-7 (or 8.5) ounce package
Small smoke sausage links - 5.5 ounce package
Directions
- Preheat the oven to 400 F.
- Grease an 8x8x2 inch baking dish with shortening.
- Crack the egg into a mixing bowl and beat with a fork until the egg and the yolk are mixed.
- Add undrained corn and half the cheese to the egg. Mix well with a wooden spoon. Add the dry muffin mix. Stir until the dry ingredients are wet (the batter will be thick).
- Spoon the batter into the baking dish.
- Pat dry the sausage link. Arrange on top of the batter.
- Bake for 30 minutes or until the top is golden.
- Remove from oven and sprinkle with the remaining cheese. Let stand for 5 minutes.
- We couldn't find corn muffin mix, so we used biscuit mix instead.
- I used two different types of sausages, which added different flavours.
- I served it with a homemade fruit salad.
