Tadpole-in-a-Hole

This recipe is from "Better Home and Gardens - New Junior Cookbook."

Ingredients

Shortening
Egg - 1
Whole kernel corn - 1-12-ounce can
Shredded cheddar cheese - 1 cup
Corn muffin mix - 1-7 (or 8.5) ounce package
Small smoke sausage links - 5.5 ounce package

Directions
  1. Preheat the oven to 400 F.
  2. Grease an 8x8x2 inch baking dish with shortening.
  3. Crack the egg into a mixing bowl and beat with a fork until the egg and the yolk are mixed.
  4. Add undrained corn and half the cheese to the egg. Mix well with a wooden spoon. Add the dry muffin mix. Stir until the dry ingredients are wet (the batter will be thick).
  5. Spoon the batter into the baking dish.
  6. Pat dry the sausage link. Arrange on top of the batter.
  7. Bake for 30 minutes or until the top is golden.
  8. Remove from oven and sprinkle with the remaining cheese. Let stand for 5 minutes.
Liam's notes
  • We couldn't find corn muffin mix, so we used biscuit mix instead.
  • I used two different types of sausages, which added different flavours.
  • I served it with a homemade fruit salad.
